- 1 can (15 oz) crushed tomatoes

- 2 cups vegetable broth
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, combine the eggplant, zucchinis, bell peppers, and onion. Drizzle with olive oil, sprinkle with salt, and toss to coat.
